INGREDIENTS:
- 1 lb. boneless/skinless chicken breast cute into 1/2'' cubes.
- 1 medium onion
- 1 1/2 tsp garlic powder
- 1 tbsp. vegetable oil
- 2- 15 1/2 ounce cans Great Northern Beans (rinsed)
- 1- 14 1/2 ounce can chicken broth
- 2- 4 oz. cans green chiles
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp oregano
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (I always leave this out as the green chiles make it spicy enough for us)
- 8 oz. sour cream
- 1/2 cup half and half
- Shredded cheddar cheese
- Tortilla chips
DIRECTIONS:
- In large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink.
- Add beans, broth, chiles and seasonings. Bring to a boil.
- Reduce heat, simmer uncovered for 30 minutes.
- Remove from heat, stir in sour cream and half and half.
- Serve immediately topped with cheddar cheese and chips for dipping.
